Ingredients
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 medium zucchini, sliced into thick rounds
- 1 cup baby bella mushrooms, whole or halved if large
- 1 medium yellow squash, sliced into thick rounds
- 8-10 broccoli florets or sweet red pepper (optional)
- 1 tablespoons olive oil
- 2 tbsp coconut aminos
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried sumac
- 1 teaspoon ground ginger
- 1 teaspoon salt (or to taste)
- Bamboo or metal skewers
Directions
- Prep the skewers by soaking them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine olive oil, oregano, basil, sumac, thyme, ground ginger, and salt.
- Add the chicken cubes to the bowl and toss to coat evenly. Let it marinate for at least 15-20 minutes.
- Thread the chicken, zucchini, mushrooms, and yellow squash onto the skewers, alternating between vegetables and chicken pieces.
- Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a couple of minutes before serving.
- Serve with a side of brown rice or a light, acid reflux-friendly salad.
