  1. Preheat the oven to 350°F and blend all ingredients until smooth.
  2. Prepare a cupcake pan by spraying with oil or using cupcake liners.
  3. Pour the mix into six muffin molds and bake for 35 minutes.
  4. Let them cool before removing from the pan, and add the topping if desired.
