Recipe:
Ingredients:
- 16 oz lactose-free cottage cheese
- 1/4 cup pureed pumpkin
- 3 tsp pumpkin pie spice
- 2 eggs
- 4 tbsp allulose sweetener
Optional Topping:
- 1/2 cup lactose-free Greek yogurt
- 1/4 cup granulated allulose sweetener (or 2 tbsp maple syrup)
Instructions:
- Preheat the oven to 350°F and blend all ingredients until smooth.
- Prepare a cupcake pan by spraying with oil or using cupcake liners.
- Pour the mix into six muffin molds and bake for 35 minutes.
- Let them cool before removing from the pan, and add the topping if desired.
These bites are ideal for a protein-packed snack or a seasonal breakfast addition!
